🍟 Crispy Homemade Tallow Fries — Like McDonald’s Used to Make!

That’s right — before 1990, McDonald’s cooked their fries in 100% beef tallow, which gave them their signature rich flavor. Then came the switch to vegetable oils, additives, and artificial flavorings — and the fries haven’t been the same since.

We’re bringing back the original way — no toxic oils, no weird chemicals. Just real potatoes, real fat, and real flavor.

✨ What You’ll Need

Ingredients:

• 4 large organic russet potatoes (i didnt have large and used about 8-10 small to mediem size potatoes)

• 1–2 quarts of grass-fed beef tallow – We rendered ouserlves but you can buy this grass fed tallow here

• Unrefined salt to taste (we love Himalayan or Celtic)

🔪 Step-by-Step: Crispy Tallow Fries at Home

1. Cut the Potatoes

Slice into sticks — I use similar vegetable slicer. Think classic French fry shape.

2. Place cut potatoes in a large bowl of cold, filtered water .

Soak for 3-4 hours (minimum 1 hour)

Why? Soaking reduces starch and makes the fries easier to digest and crispier when fried.

3. Rinse & Dry

Drain the water, rinse the potatoes well, and pat them completely dry with a towel.

👉 This step is key for crispiness.

4. Heat the Tallow

Melt tallow in a heavy pan (cast iron is great). Heat to 350–375°F (175–190°C). Use enough tallow to let the fries float while cooking (you can reuse this tallow for cooking later)

5. Fry in Batches

Carefully fry in small batches until golden — about 4–6 minutes depending on thickness. Stir gently to prevent sticking.

6. Drain & Season

Place on a paper towel or wire rack to drain. Sprinkle with unrefined salt while still hot.

7. Serve Immediately

Enjoy on their own or with a clean dip — like probiotic ketchup, mustard, or raw garlic aioli.
